When buying meat to preserve with vacuum sealer, ensure you go for the freshest cut. Fresh meat will be easier to preserve and has a longer shelf life. Clean the meat with clean water and then dry it properly. Proceed to cut the meat into small pieces. When packaging the meat into the sealing bags, pack it in small groups to increase preservation quality.

It is advisable to try out pre-frozen meat. Pre-frozen meat is known to retain its nutrients flavor and taste even after vacuum sealing it.

  1. Vacuum Sealing Stage

Most vacuum sealers are designed in such a way that they automatically detect the sealing bag. The vacuum sealer works by sucking all the air from the meat. This leaves the meat in a vacuum state which reduces the chances of any micro-organism activities within the meat.

You however, need to be cautious because vacuum sealer is known to absorb even the liquid in the meat during the suction process. To stop liquids from being sucked, you can use a paper towel at the opening of the bag. The paper towel will stop the sealer from sucking out all the liquid in your meat.

It is also ideal to add an oxygen absorber sachet in to the sealing bag. This helps in bringing better results. Presence of oxygen may make the conditions favorable for micro-organism activities to take place. It is also ideal for you if you added date and time sticker on the sealing bag. This helps you have a time-frame of how long the meat has been in preservation.

  1. Post Packaging

It is imperative to ensure that the meat isn’t contaminated before taking it to your kitchen. In case you see a dark purple color on your meat; that shows signs of contamination. Such contamination could be as a result of presence of oxygen. Healthy meat will be same color as before preservation and will retain its nutrients, flavor and taste.

These are the three most important steps to preserving your meat. Meat is one very sensitive commodity and can go bad if not well preserved. By preserving it properly in a vacuum sealed bag, you will not only increase its shelf life but also retain all the nutrients, flavor and taste in the meat.
